Carrot Raisin Salad
Ingredients:
3 cups carrots, shredded *
1/2 cup raisins, soaked **
1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon packed brown sugar
Salt to taste
Optional: 1 cup chopped apple, or well drained crushed pineapple
Directions:
In a medium bowl, combine the shredded carrots, raisins, mayonnaise,
lemon juice, sugar, and salt. Add one or more of the optional
ingredients. Mix well and chill prior to serving time.
*Use a cheese grater to shred the carrots by hand BUT be VERY careful
you do not catch your knuckles on it. Trust me, it hurts!
**Soak the raisins in warm water to soften and plump them, then drain on
paper towel and press out excess liquid.
